So, I’m almost finished with the first batch of sauerkraut. It was good at first but has been getting better. I’m almost at the end of it and I noticed it was making a little sound. I put my ear up to the jar and am pleased to say it was quietly bubbling away. I did it right! (Kind of.)

Dear New Orleans, I’m now taking recommendations for certain professions: a tax preparer/financial planner (who deals with freelancers/disorganized people/people who don’t know what they are doing), a plain doctor and also a dermatologist, and someone or some institution who can teach me 3-d computer animation.
